Summer just wouldn’t be the same without a fabulous glass of refreshing Spritzer. I love this recipe because it mixes both fruit and herbs together for a sweet, yet earthy flavour. This is a wonderful drink on a warm sunny afternoon, with an easy summer read on the patio. Me time!
Rosemary Citrus Spritzer
makes 10 to 12 drinks
4 (4-inch) sprigs fresh rosemary
3/4 cups sugar
1/4 cup honey
Rosemary and lemon for garnish (optional)
Peel off thick strips of zest from a lemon.
Juice the lemons and oranges into a liquid measuring cup. Top off with water if necessary to make 1 cup. (There should be about 1 cup of liquid.)
Combine juice, zest, rosemary, sugar, and honey in a saucepan over medium heat. Boil for 1 minute, stirring constantly to dissolve the sugar.
Remove from the heat and let it sit for 10 minutes. Strain, discard the solids, and let the syrup cool completely.
To serve, fill an 8-ounce glass halfway with ice cubes, add 2-3 tablespoons of syrup, fill with soda water, and stir. Garnish with rosemary sprigs and/or lemon slices, if you wish.
